Weight gain occurs when more calories are consumed than burned. Approximately 3,500 excess calories are needed to gain one pound, according to the University of Nebraska. Eating 100 extra calories per day can lead to a weight gain of 10 pounds in a year. Some foods are very low in calories and make you feel full long before you eat enough to gain weight. Unlimited amounts of a single food can be problematic because they lead to an unbalanced diet.
Fruits
Fresh fruits are rich in water and fiber and low in calories. Fruits preserved in their own juice are low in calories, but fruits in syrup usually contain added sugars and calories. Dried fruits and fruit juices are lower in water and fiber, respectively, and provide more calories per serving than whole fruit. Fruits included in baked goods, such as cakes, or used as dessert ingredients are more likely to contribute to weight gain.
Vegetables
Most vegetables are free from restrictions on the amount you can eat. Celery, tomatoes and various types of lettuce have very low caloric content, high fiber content and high water content. Starchy vegetables, such as potatoes and sweet potatoes, tend to be higher in calories, although eating the skin increases the fiber content. Preparation is an important consideration: vegetables fried or sautéed in butter carry additional calories.
Water
Although technically not a food, water can create a feeling of fullness that translates into eating less at meals. Water has no calories and is an important part of a well-balanced diet. Extremely excessive water consumption can dilute sodium in the blood, leading to water intoxication.
